Unlike washed coffees, the natural process allows the freshly harvested coffee cherries to dry with the fruit still surrounding the bean. As the coffee slowly dries, some of the fruit's natural sugars and character influence the seed inside, often creating a cup that's sweeter, fuller, and more fruit-forward.
