Grown by smallholder farmers in one of the most remote, untouched coffee-growing regions on Earth, this rare highland lot earns its local name "Balus Kopi" (airplane coffee) for good reason: there are no roads out of Simbai. Tucked deep in the Bismarck Range, every single bag must be flown out of the mountains on small charter planes before it ever reaches a ship, our roaster, or your cup.
Carefully roasted in-house, this lot yields a beautifully balanced profile with a smooth, syrupy mouthfeel. It opens with rich cocoa and warm caramel sweetness, layers into dark plum and dried fig, and finishes with a delicate green tea clarity that keeps the cup exceptionally clean. A complex single-origin that shines as a slow pour-over and pulls a remarkably rich, full-bodied espresso shot.
